茄子 2条 切成条 (eggplant - 2 - cut into strip)
粟粉 150g (corn flour - 150g)
油 2杯 (oil - 2 cups)
咸蛋黄 2粒 (salted egg yolk - 2)
咖哩叶 2大匙 (curry leaves - 2tbsp)
调味料 (Seasoning)
盐 1/2小匙 (salt - 1/2tsp)
糖 1/2小匙 (sugar - 1/2tsp)
糖 1/2小匙 (sugar - 1/2tsp)
做法 (Method)
(1) 茄子沾上粟粉,放入热油中炸至金黄色,捞起沥干。
Coat eggplant with corn flour. Deep-fry in hot oil until golden brown. Dish and drain.

(2) 烧热1大匙油,加入咸蛋黄炒散。
Heat 1tbsp oil and add in salted egg yolk and stir-fry till aromatic.
(3) 加入咖哩叶和调味料,炒匀。Heat 1tbsp oil and add in salted egg yolk and stir-fry till aromatic.
Add in curry leaves and seasoning and stir well.
(4) 小火,加入茄子快速炒匀即可。
Add in eggplant and stir-fry in low heat until well mixed. Serve.
