小辣椒网友说她的家乡自制面很好吃,没有碱水味,小辣椒就买来试试。网友的面不是外面卖的,它是扁扁的,很新鲜好吃。。。赞!!!
材料 (Ingredient)
福建面 750g (Hokkien mee - 750g)
波菜 1颗 (spinach - 1)
鱼饼 4粒 切片 (fish paste - 4 - cut into pieces)
鸡珍 3-5颗 切片 (chicken gizzard - 3-5 - cut into pieces)
猪油 2大匙 (pork oil - 2tbsp)
葱头茸 2大匙 (chopped shallot - 2tbsp)
蒜头茸 2大匙 (chopped garlic - 2tbsp)
调味料 (Seasoning)
生抽 1大匙 (soy sauce - 1tbsp)老抽 1大匙 (dark soy sauce - 1tbsp)
鸡汤 200ml (chicken soup - 200ml)
胡椒粉 少许 (pepper - appropriate)
做法 (Method)
(1) 福建面放进滚水中煮一下,捞起沥干备有。
Blanch Hokkien mee in hor water for a while. Dish and drain.
(2) 烧热猪油,爆香葱头茸和蒜茸。
Heat up pork oil,saute chopped shallot and chopped garlic until fragrance.
(3) 加入鸡珍和鱼饼炒香,加入福建面、波菜和调味料,快速炒至干香即可。
Add in chicken gizzard and fish paste and stir-fry till aromatic. Add in Hokkien mee, spinach and seasoning and stir-fry until fragrance and dry. Serve.
